私たちの物語 (Our Story)
“The Japanese word shokunin is defined as ‘craftsman’ or ‘artisan’. The apprentice is taught that shokunin means not only having technical skills, but also implies an attitude and social consciousness. … The shokunin has a social obligation to work his/her best for the general welfare of the people. This obligation is both spiritual and material, in that no matter what it is, the shokunin’s responsibility is to fulfill the requirement.” -Toshio Odate
Chef Michael Che embodies the true spirit of the Shokunin. With over 15 years in the restaurant industry (10 years as a Sushi Chef) he is always looking to improve the flavor of his ingredients and use the skills he learned throughout his career to provide his customers with the best experience. Soto, Kyoten Sushiko, and apprenticing under both Otto Phan (Owner of Kyoten Chicago) and Misao Masuda (former Executive Chef of Nobu located in Lanai Honolulu Four Seasons Hotel) are just a few of the places Chef Michael has worked under. With his experience from Sushi Apprenticeship and his flavor combinations of South East Asian + Japanese Cuisine, Chef Michael is sure to deliver what he believes is his best.
